Shortcut Sausage and Shrimp Gumbo
Steamed Rice with Tomato
Ingredients
- 2½ Tbsp whole wheat flour
- 2 Tbsp olive oil
- 1 green bell pepper, chopped
- ½ onion, chopped
- 1 clove garlic, minced
- 1 tsp dried oregano
- 2 cups water
- ½ (12-oz) pkg andouille sausage or natural turkey andouille sausage, sliced
- ½ (10-oz) pkg frozen cut okra
- ½ lb peeled and deveined, large raw shrimp
Instructions
- Cook flour and oil in a Dutch oven over medium heat 5 minutes or until golden, stirring constantly; add bell pepper, onion, garlic, and oregano.
- Sauté 10 minutes or until vegetables are tender; add water, sausage, and okra. Bring to a boil; reduce heat, and simmer 7 minutes.
- Add shrimp, and cook 3 minutes or until shrimp turn pink and sauce is thickened.
- Serve over Steamed Rice with Tomato recipe.
Side Dish Ingredients
- ¾ cup instant rice
- ½ cup finely chopped tomato
- 1 green onion, chopped
- ½ Tbsp extra virgin olive oil
- ⅛ tsp salt
Side Dish Instructions
- Cook rice according to package directions.
- Toss together rice, tomato, green onion, oil, and salt.
