Skillet Mojo Shrimp

Steamed Rice and Roasted Broccoli

Ingredients

  • ½ Tbsp minced garlic
  • 3 Tbsp olive oil
  • 3 Tbsp orange juice
  • 3 Tbsp fresh lime juice
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ¾ lb peeled and deveined, large raw shrimp
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Whisk together garlic, oil, orange juice, lime juice, cumin, and oregano in a large bowl. Reserve ¼ cup mixture in a small bowl.
  2. Add shrimp to large bowl of marinade; toss and let stand 10 minutes.
  3. Drain shrimp, discarding marinade. Cook shrimp in a large nonstick skillet over medium-high heat 2 minutes, stirring occasionally, until shrimp just begin to turn pink.
  4. Add reserved ¼ cup marinade to skillet; cook 1 minute. Remove from heat, and sprinkle with cilantro; serve over rice.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable jasmine rice
  • ½ (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Heat rice according to package directions.
  2. Preheat oven to 400°F. Toss together broccoli and oil on a rimmed baking sheet. Bake 10 minutes or until browned and tender; season with salt and pepper to taste.
