Lettuce-Wrapped Cuban Burgers
Marinated Cucumbers and Tomatoes
Ingredients
- 1 lb ground beef
- ½ lb ground pork
- ½ cup whole-grain mustard, divided
- ½ tsp pepper
- 6 slices Swiss cheese
- 6 Tbsp mayonnaise
- 6 large romaine lettuce leaves
- 18 dill pickle slices
Instructions
- Coat a grill pan with cooking spray; heat to medium-high heat.
- Stir together beef, pork, 2 Tbsp mustard, and pepper. Form into 6 patties; grill 4 minutes per side or until no longer pink in center.
- Top each burger with 1 slice cheese; grill 1 minute or until melted.
- Stir together mayonnaise and 6 Tbsp mustard; spread over one side of each lettuce leaf. Top with burger patty and pickle slices.
Side Dish Ingredients
- 1½ cups sliced cucumber
- 1½ cups grape tomatoes, halved
- ½ cup Italian dressing
Side Dish Instructions
- Combine cucumber, tomatoes, and dressing in a large bowl; toss. Chill 30 minutes to 1 hour.
