Lettuce-Wrapped Cuban Burgers

Ingredients

  • 1 lb ground beef
  • ½ lb ground pork
  • ½ cup whole-grain mustard, divided
  • ½ tsp pepper
  • 6 slices Swiss cheese
  • 6 Tbsp mayonnaise
  • 6 large romaine lettuce leaves
  • 18 dill pickle slices

Instructions

  1. Coat a grill pan with cooking spray; heat to medium-high heat.
  2. Stir together beef, pork, 2 Tbsp mustard, and pepper. Form into 6 patties; grill 4 minutes per side or until no longer pink in center.
  3. Top each burger with 1 slice cheese; grill 1 minute or until melted.
  4. Stir together mayonnaise and 6 Tbsp mustard; spread over one side of each lettuce leaf. Top with burger patty and pickle slices.

Side Dish Ingredients

  • 1½ cups sliced cucumber
  • 1½ cups grape tomatoes, halved
  • ½ cup Italian dressing

Side Dish Instructions

  1. Combine cucumber, tomatoes, and dressing in a large bowl; toss. Chill 30 minutes to 1 hour.
