Greek Ham Tortilla Wraps

Ingredients

  • 2 cups baby arugula
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp red wine vinegar
  • ¼ tsp dried oregano
  • 4 (8-inch) soft whole-wheat flour tortillas
  • ½ lb sliced low-sodium ham
  • ½ cup thinly sliced cucumber
  • ¼ cup thinly sliced roasted red pepper
  • ¼ cup thinly sliced red onion
  • ¼ cup pitted kalamata olives
  • ⅓ cup feta cheese

Instructions

  1. Combine arugula, oil, vinegar, and oregano; toss and set aside.
  2. Lay tortillas on a flat work surface and top with ham slices. Layer cucumber, red pepper, onion, olives, feta, and arugula mixture onto the left side of ham.
  3. Starting with the left side, tightly roll up and wrap in parchment paper to secure.

  • 1 (4.4-oz) pkg blueberries
  • 1 (4.4-oz) pkg blackberries

Side Dish Instructions

  1. Combine berries in a bowl; toss gently.
