Spinach Salad with Chicken and Plums
Herbed Goat Cheese Spread with Crackers
Ingredients
- ½ cup walnuts
- 2 (5-oz) pkg baby spinach
- 1½ cups shredded rotisserie chicken, skin removed
- 1 small red onion, thinly sliced
- 4 plums, pitted and cut into thin wedges
- ¼ cup extra virgin olive oil
- 2 Tbsp red wine vinegar
- 2 tsp honey
- 1 tsp Dijon mustard
- ½ tsp dried oregano
- ½ tsp salt
Instructions
- Toast walnuts in a dry skillet 3 to 4 minutes or until fragrant.
- Combine spinach, chicken, onion, plums and walntus in a large bowl.
- Whisk together remaining ingredients and drizzle over spinach mixture; toss to coat.
Side Dish Ingredients
- 2 Tbsp chopped fresh flat-leaf parsley
- 3 oz goat cheese
- 1 small clove garlic, minced
- 32 reduced-fat thin wheat crackers
Side Dish Instructions
- Combine parsley, goat cheese and garlic in a bowl; mash with a wooden spoon until well blended.
- Serve spread with crackers.
