Spinach Salad with Chicken and Plums

Ingredients

  • ½ cup walnuts
  • 2 (5-oz) pkg baby spinach
  • 1½ cups shredded rotisserie chicken, skin removed
  • 1 small red onion, thinly sliced
  • 4 plums, pitted and cut into thin wedges
  • ¼ cup extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • ½ tsp dried oregano
  • ½ tsp salt

Instructions

  1. Toast walnuts in a dry skillet 3 to 4 minutes or until fragrant.
  2. Combine spinach, chicken, onion, plums and walntus in a large bowl.
  3. Whisk together remaining ingredients and drizzle over spinach mixture; toss to coat.

Side Dish Ingredients

  • 2 Tbsp chopped fresh flat-leaf parsley
  • 3 oz goat cheese
  • 1 small clove garlic, minced
  • 32 reduced-fat thin wheat crackers

Side Dish Instructions

  1. Combine parsley, goat cheese and garlic in a bowl; mash with a wooden spoon until well blended.
  2. Serve spread with crackers.
