Banana Pancake Crêpes

Ingredients

  • 4 bananas
  • 4 large eggs
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 1 cup blueberries
  • ¼ cup raw honey

Instructions

  1. Heat a griddle or large nonstick skillet over medium-low heat. Mash bananas until smooth in a bowl. Add eggs, vanilla, salt, and cinnamon; whisk until blended.
  2. Pour batter onto griddle to make thin 3-inch pancakes.
  3. Cook 3 to 4 minutes or until sides are golden brown. Carefully flip, and cook other side 2 minutes or until done. Top with berries; drizzle with honey.

Side Dish Ingredients

  • 1 cup whole almonds
  • ½ cup unsweetened shredded coconut

Side Dish Instructions

  1. Mix nuts and coconut. Serve as a topping for crêpes recipe.
