Banana Pancake Crêpes
Breakfast Trail Mix
Ingredients
- 4 bananas
- 4 large eggs
- 1 tsp vanilla extract
- ½ tsp salt
- ½ tsp ground cinnamon
- 1 cup blueberries
- ¼ cup raw honey
Instructions
- Heat a griddle or large nonstick skillet over medium-low heat. Mash bananas until smooth in a bowl. Add eggs, vanilla, salt, and cinnamon; whisk until blended.
- Pour batter onto griddle to make thin 3-inch pancakes.
- Cook 3 to 4 minutes or until sides are golden brown. Carefully flip, and cook other side 2 minutes or until done. Top with berries; drizzle with honey.
Side Dish Ingredients
- 1 cup whole almonds
- ½ cup unsweetened shredded coconut
Side Dish Instructions
- Mix nuts and coconut. Serve as a topping for crêpes recipe.
