Blueberry-Peach Smoothie

Ingredients

  • 4 cups blueberries
  • 2 peaches, peeled, pitted, and quartered
  • 1 (13.5-oz) can coconut milk
  • 1 cup ice
  • 3 Tbsp raw honey
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp flaxseed, ground

Instructions

  1. Process blueberries, peaches, coconut milk, ice, honey, lemon juice and flaxseed in a blender, scraping sides as needed. Add enough water to reach desired consistency.

Side Dish Ingredients

  • 2 cups walnuts
  • ⅓ cup raw honey
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Heat a dry skillet over medium-high heat. Add nuts, honey, and salt; cook 3 minutes or until honey and nuts are browned, stirring often. Cool. Serve warm or at room temperature.
