Pork Chops with Peaches and Blackberries

Avocado-Tomato Salad


  • 2 Tbsp balsamic vinegar
  • 2 Tbsp fresh lime juice
  • 2 Tbsp raw honey
  • 1 Tbsp chopped fresh thyme
  • 6 (10-oz) bone-in pork chops (about 1½ inches thick)
  • 6 peaches, quartered
  • 2 Tbsp avocado oil
  • 1 (4.4-oz) pkg blackberries


  1. Preheat grill or grill pan to medium-high heat. Combine vinegar, lime juice, honey, and thyme; brush onto pork.
  2. Sprinkle pork lightly with salt and pepper. Brush peaches with oil.
  3. Grill pork on a grill rack rubbed with oil, covered, 6 to 8 minutes per side or until done. Grill peaches, cut sides down, 2 minutes per side or until tender.
  4. Toss together peaches, blackberries, and salt and pepper to taste. Serve with pork.

Side Dish Ingredients

  • 2 beefsteak tomatoes, seeded and diced
  • 2 avocados, diced
  • ½ small red onion, thinly sliced
  • 2 Tbsp extra virgin olive oil
  • 1½ Tbsp fresh lime juice

Side Dish Instructions

  1. Combine all ingredients and salt and pepper to taste in a bowl. Let stand 5 minutes before serving.
