Grilled Lemon-Basil Chicken
Grilled Tomatoes and Red Onions
Ingredients
- 6 boneless, skinless chicken breasts
- ½ tsp garlic salt
- ½ tsp lemon-pepper seasoning
- 2 Tbsp fresh lemon juice
- 2 Tbsp chopped fresh basil
- 1 tsp Dijon mustard
- 2 cloves garlic
- ¼ cup extra virgin olive oil
Instructions
- Preheat grill to medium-high heat. Sprinkle chicken with garlic salt and lemon pepper. Grill chicken 6 minutes per side or until done.
- Process lemon juice, basil, mustard, garlic, and oil in a blender or food processor until smooth; serve over chicken.

- 6 beefsteak tomatoes, cut into large wedges
- 2 red onions, cut into large wedges
- 2 Tbsp coconut oil, melted
- 1 Tbsp Italian seasoning
- ½ tsp salt
Side Dish Instructions
- Preheat grill to medium-high heat. Drizzle tomatoes and onions with oil; sprinkle with Italian seasoning and salt.
- Grill, covered, 5 to 10 minutes or until onions are crisp-tender, turning occasionally.
