Grilled Lemon-Basil Chicken

Ingredients

  • 6 boneless, skinless chicken breasts
  • ½ tsp garlic salt
  • ½ tsp lemon-pepper seasoning
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh basil
  • 1 tsp Dijon mustard
  • 2 cloves garlic
  • ¼ cup extra virgin olive oil

Instructions

  1. Preheat grill to medium-high heat. Sprinkle chicken with garlic salt and lemon pepper. Grill chicken 6 minutes per side or until done.
  2. Process lemon juice, basil, mustard, garlic, and oil in a blender or food processor until smooth; serve over chicken.

Side Dish Ingredients

  • 6 beefsteak tomatoes, cut into large wedges
  • 2 red onions, cut into large wedges
  • 2 Tbsp coconut oil, melted
  • 1 Tbsp Italian seasoning
  • ½ tsp salt

Side Dish Instructions

  1. Preheat grill to medium-high heat. Drizzle tomatoes and onions with oil; sprinkle with Italian seasoning and salt.
  2. Grill, covered, 5 to 10 minutes or until onions are crisp-tender, turning occasionally.
