Herbed Pork Tenderloin
Easy Steamed Greek Broccoli
Ingredients
- 2 Tbsp chopped fresh parsley
- 1 Tbsp chopped fresh thyme
- 1 Tbsp chopped fresh mint
- 2 Tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1 tsp pepper
- 2 lb pork tenderloin, trimmed
Instructions
- Preheat oven to 400°F. Combine herbs, oil, salt, and pepper in a small bowl.
- Place pork on a baking sheet rubbed with oil. Rub herb mixture all over pork. Let stand 20 minutes.
- Roast 20 to 25 minutes or until a meat thermometer reads 145°F. Let stand 3 minutes before slicing.
Side Dish Ingredients
- 1½ lb broccoli, cut into florets
- 2 Tbsp extra virgin olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp Greek seasoning
Side Dish Instructions
- Steam broccoli in a steamer basket over simmering water 6 minutes or until crisp-tender. Transfer broccoli to a bowl.
- Stir together oil, vinegar, and seasoning. Drizzle over broccoli; toss.
