Creole Turkey Sausage-Shrimp Ragu
Microwave Spaghetti Squash "Noodles"
Ingredients
- 2 Tbsp coconut oil
- 1 (12-oz) pkg uncured smoked turkey sausage (such as Hillshire Farm Naturals), cut into ½-inch pieces
- 1 onion, finely chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 1½ Tbsp Creole seasoning
- 1 Tbsp chopped fresh thyme
- 1½ lb large shrimp, peeled and deveined
- 1 (14.5-oz) can fire-roasted diced tomatoes, drained
Instructions
- Heat oil in a large skillet over medium heat. Cook sausage 5 minutes or until browned.
- Add onion, bell pepper, garlic, seasoning, and thyme; cook 8 minutes, stirring often.
- Add shrimp and tomatoes. Cook 5 minutes or until shrimp turn pink.
- Serve over spaghetti squash, if desired.
Side Dish Ingredients
- 2 spaghetti squash
- 2 Tbsp extra virgin olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cut squash in half, and remove seeds.
- Place squash, cut sides down, in batches if needed, in a microwavable dish. Cover with plastic wrap; cut a small slit in plastic wrap.
- Cook at HIGH 8 to 12 minutes or until tender; let stand 10 minutes.
- Remove spaghetti-like strands with a fork. Toss squash strands with oil, salt, and pepper.
