Creole Turkey Sausage-Shrimp Ragu

Ingredients

  • 2 Tbsp coconut oil
  • 1 (12-oz) pkg uncured smoked turkey sausage (such as Hillshire Farm Naturals), cut into ½-inch pieces
  • 1 onion, finely chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1½ Tbsp Creole seasoning
  • 1 Tbsp chopped fresh thyme
  • 1½ lb large shrimp, peeled and deveined
  • 1 (14.5-oz) can fire-roasted diced tomatoes, drained

Instructions

  1. Heat oil in a large skillet over medium heat. Cook sausage 5 minutes or until browned.
  2. Add onion, bell pepper, garlic, seasoning, and thyme; cook 8 minutes, stirring often.
  3. Add shrimp and tomatoes. Cook 5 minutes or until shrimp turn pink.
  4. Serve over spaghetti squash, if desired.

Side Dish Ingredients

  • 2 spaghetti squash
  • 2 Tbsp extra virgin olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cut squash in half, and remove seeds.
  2. Place squash, cut sides down, in batches if needed, in a microwavable dish. Cover with plastic wrap; cut a small slit in plastic wrap.
  3. Cook at HIGH 8 to 12 minutes or until tender; let stand 10 minutes.
  4. Remove spaghetti-like strands with a fork. Toss squash strands with oil, salt, and pepper.
