Steak Soft Tacos
Homemade Guacamole with Multigrain Chips and Watermelon
Ingredients
- ¾ lb boneless top sirloin, trimmed (or use flank steak)
- ¼ cup olive oil, divided
- 1 clove garlic, minced
- ½ tsp ground cumin
- ¼ tsp salt
- ¼ tsp pepper
- 2 to 3 small bell peppers (any color), thinly sliced
- 4 soft taco-size flour tortillas or corn tortillas
- ½ (16-oz) container fresh salsa
- 1 cup shredded Mexican-blend cheese
- ½ cup sour cream
- 1 small lime, cut into wedges
Instructions
- Cut beef into thin strips; toss with 1 Tbsp oil, garlic, cumin, salt, and pepper.
- Heat 1 Tbsp oil in a large skillet over medium-high heat; add beef, and sauté 5 minutes or to desired doneness; remove from skillet.
- Add 2 Tbsp oil to drippings in skillet; add bell peppers. Sauté until vegetables are tender and caramelized.
- Heat tortillas according to package directions.
- Serve beef in tortillas with bell peppers, salsa, cheese, sour cream, and lime wedges.
Side Dish Ingredients
- 1 avocado, chopped
- 1 Roma tomato, chopped (optional)
- 1 Tbsp lime juice
- 1 clove garlic, minced
- ¼ tsp salt
- ½ (8-oz) pkg multigrain tortilla chips
- 1 small wedge watermelon, cut up
Side Dish Instructions
- Mash avocado, tomato, lime juice, garlic, and salt in a bowl.
- Serve guacamole with tortilla chips and watermelon on the side.
