Steak Soft Tacos

Homemade Guacamole with Multigrain Chips and Watermelon

Ingredients

  • ¾ lb boneless top sirloin, trimmed (or use flank steak)
  • ¼ cup olive oil, divided
  • 1 clove garlic, minced
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 to 3 small bell peppers (any color), thinly sliced
  • 4 soft taco-size flour tortillas or corn tortillas
  • ½ (16-oz) container fresh salsa
  • 1 cup shredded Mexican-blend cheese
  • ½ cup sour cream
  • 1 small lime, cut into wedges

Instructions

  1. Cut beef into thin strips; toss with 1 Tbsp oil, garlic, cumin, salt, and pepper.
  2. Heat 1 Tbsp oil in a large skillet over medium-high heat; add beef, and sauté 5 minutes or to desired doneness; remove from skillet.
  3. Add 2 Tbsp oil to drippings in skillet; add bell peppers. Sauté until vegetables are tender and caramelized.
  4. Heat tortillas according to package directions.
  5. Serve beef in tortillas with bell peppers, salsa, cheese, sour cream, and lime wedges.

Side Dish Ingredients

  • 1 avocado, chopped
  • 1 Roma tomato, chopped (optional)
  • 1 Tbsp lime juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ½ (8-oz) pkg multigrain tortilla chips
  • 1 small wedge watermelon, cut up

Side Dish Instructions

  1. Mash avocado, tomato, lime juice, garlic, and salt in a bowl.
  2. Serve guacamole with tortilla chips and watermelon on the side.
