Paleo Nachos

Ingredients

  • 1 lb grass-fed ground beef
  • 2 carrots, grated
  • 2 tsp minced garlic
  • ½ tsp ground cumin
  • 1 (14.5-oz) can diced tomatoes
  • 2 avocados, mashed
  • 1 lime, halved
  • 1 head romaine lettuce, chopped
  • 2 small tomatoes, chopped
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook beef, carrots, and garlic in a large nonstick skillet over medium-high heat until beef is no longer pink; drain. Stir in cumin and canned tomatoes; simmer 4 to 5 minutes. Season meat mixture with salt and pepper to taste.
  2. Stir together avocados and lime juice; season with salt to taste.
  3. For each serving, spoon beef mixture over romaine; sprinkle with chopped tomatoes and cilantro. Top with mashed avocado.
