Skillet Meal
Paleo Nachos
Ingredients
- 1 lb grass-fed ground beef
- 2 carrots, grated
- 2 tsp minced garlic
- ½ tsp ground cumin
- 1 (14.5-oz) can diced tomatoes
- 2 avocados, mashed
- 1 lime, halved
- 1 head romaine lettuce, chopped
- 2 small tomatoes, chopped
- 2 Tbsp chopped fresh cilantro
Instructions
- Cook beef, carrots, and garlic in a large nonstick skillet over medium-high heat until beef is no longer pink; drain. Stir in cumin and canned tomatoes; simmer 4 to 5 minutes. Season meat mixture with salt and pepper to taste.
- Stir together avocados and lime juice; season with salt to taste.
- For each serving, spoon beef mixture over romaine; sprinkle with chopped tomatoes and cilantro. Top with mashed avocado.
