Baked Chicken Tenders with Honey Mustard

Ingredients

  • 1 lb chicken tenders
  • 1 Tbsp avocado oil
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup Dijon mustard
  • ¼ cup raw honey
  • 1 Tbsp avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)

Instructions

  1. Preheat oven to 350°F. Drizzle chicken with oil; sprinkle with salt and pepper on a rimmed baking sheet. Bake 20 minutes or until done.
  2. Meanwhile, stir together mustard, honey, and mayonnaise. Serve chicken tenders with honey mustard for dipping.

  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 1 cup diced pineapple

Side Dish Instructions

  1. Combine fruit in a large bowl. Chill until ready to serve.
