Grilled Orange-Chicken Salad

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 3 cups chopped romaine lettuce
  • ½ red bell pepper, thinly sliced
  • 1 cup grape tomatoes, halved
  • 1 carrot, shaved into ribbons
  • ¼ cup crumbled feta cheese
  • 1 green onion, chopped
  • 2 small oranges
  • 1½ tsp white wine vinegar
  • 1½ tsp olive oil

Instructions

  1. Preheat grill or grill pan to medium-high heat; sprinkle chicken with ⅛ tsp each salt and pepper.
  2. Grill chicken 6 minutes per side or until done; cut chicken into ½-inch-thick slices. Keep warm.
  3. Combine lettuce, bell pepper, tomatoes, carrot, cheese, and onion in a bowl.
  4. Squeeze juice from one orange to equal 1½ Tbsp; peel and slice remaining orange.
  5. Whisk together orange juice, vinegar, oil, and ⅛ tsp each salt and pepper; pour over salad, and toss.
  6. Spoon salad onto plates; top each with chicken and oranges.

  • 2 pita bread rounds (preferably whole wheat), split and each cut into 6 wedges
  • 2 Tbsp olive oil
  • 1½ tsp Italian seasoning
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Arrange pita wedges on a rimmed baking sheet.
  2. Brush rough sides with oil; sprinkle with Italian seasoning, salt, and pepper.
  3. Bake 6 to 8 minutes or until crisp.
