Grilled Orange-Chicken Salad
Herbed Pita Chips
Ingredients
- ¾ lb boneless, skinless chicken breasts
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 3 cups chopped romaine lettuce
- ½ red bell pepper, thinly sliced
- 1 cup grape tomatoes, halved
- 1 carrot, shaved into ribbons
- ¼ cup crumbled feta cheese
- 1 green onion, chopped
- 2 small oranges
- 1½ tsp white wine vinegar
- 1½ tsp olive oil
Instructions
- Preheat grill or grill pan to medium-high heat; sprinkle chicken with ⅛ tsp each salt and pepper.
- Grill chicken 6 minutes per side or until done; cut chicken into ½-inch-thick slices. Keep warm.
- Combine lettuce, bell pepper, tomatoes, carrot, cheese, and onion in a bowl.
- Squeeze juice from one orange to equal 1½ Tbsp; peel and slice remaining orange.
- Whisk together orange juice, vinegar, oil, and ⅛ tsp each salt and pepper; pour over salad, and toss.
- Spoon salad onto plates; top each with chicken and oranges.

- 2 pita bread rounds (preferably whole wheat), split and each cut into 6 wedges
- 2 Tbsp olive oil
- 1½ tsp Italian seasoning
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Arrange pita wedges on a rimmed baking sheet.
- Brush rough sides with oil; sprinkle with Italian seasoning, salt, and pepper.
- Bake 6 to 8 minutes or until crisp.
