Pork Tenderloin Sandwiches with Spicy Basil Mayonnaise

Ingredients

  • 2 pork tenderloins
  • 1 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 6 hamburger buns, split
  • 1 cup mayonnaise
  • ¼ cup chopped fresh basil
  • 2 Tbsp Sriracha hot sauce

Instructions

  1. Preheat grill or grill pan to medium-high heat. Rub pork with oil; sprinkle with salt and pepper.
  2. Grill pork, covered, 8 to 10 minutes per side or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 3 minutes; thinly slice.
  3. Meanwhile, grill buns, cut sides down, 1 minute or until toasted.
  4. Stir together mayonnaise, basil, and Sriracha in a small bowl; reserve half of mixture for French fries.
  5. Spread remaining mayonnaise mixture on bottom buns. Add pork and desired amount of Asian Slaw recipe. Cover with bun tops.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • 1 cup thinly sliced peeled English cucumber
  • ½ cup packed fresh cilantro leaves
  • 1 jalapeño pepper, minced
  • 2 Tbsp olive oil
  • 2 Tbsp rice wine vinegar
  • 1 (32-oz) pkg frozen French fries

Side Dish Instructions

  1. Toss together all ingredients except French fries in a bowl; let stand 10 minutes before serving. Season with salt and pepper to taste.
  2. Bake fries according to package directions.
