Pork Tenderloin Sandwiches with Spicy Basil Mayonnaise
Asian Slaw and Oven Fries
Ingredients
- 2 pork tenderloins
- 1 Tbsp olive oil
- 1 tsp salt
- ½ tsp pepper
- 6 hamburger buns, split
- 1 cup mayonnaise
- ¼ cup chopped fresh basil
- 2 Tbsp Sriracha hot sauce
Instructions
- Preheat grill or grill pan to medium-high heat. Rub pork with oil; sprinkle with salt and pepper.
- Grill pork, covered, 8 to 10 minutes per side or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 3 minutes; thinly slice.
- Meanwhile, grill buns, cut sides down, 1 minute or until toasted.
- Stir together mayonnaise, basil, and Sriracha in a small bowl; reserve half of mixture for French fries.
- Spread remaining mayonnaise mixture on bottom buns. Add pork and desired amount of Asian Slaw recipe. Cover with bun tops.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw
- 1 cup thinly sliced peeled English cucumber
- ½ cup packed fresh cilantro leaves
- 1 jalapeño pepper, minced
- 2 Tbsp olive oil
- 2 Tbsp rice wine vinegar
- 1 (32-oz) pkg frozen French fries
Side Dish Instructions
- Toss together all ingredients except French fries in a bowl; let stand 10 minutes before serving. Season with salt and pepper to taste.
- Bake fries according to package directions.
