Sriracha-and-Honey-Glazed Shrimp Bowls

Ingredients

  • 2 lb peeled and deveined, large raw shrimp
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • ¼ cup honey
  • 2 Tbsp Sriracha hot sauce
  • 2 tsp toasted sesame seeds
  • 3 (10-oz) pkg frozen Asian-style quinoa
  • ¼ cup chopped fresh cilantro

Instructions

  1. Sprinkle shrimp with salt and pepper. Cook shrimp in hot oil in a large nonstick skillet over medium-high heat 1 to 2 minutes or until just beginning to turn pink.
  2. Stir together honey, Sriracha, and sesame seeds; add to skillet, and cook 1 to 2 minutes, stirring until sauce is thickened and bubbly and shrimp turns pink.
  3. Meanwhile, cook quinoa according to package directions. Spoon quinoa mixture into 6 bowls; top with shrimp and cilantro.
