Jalapeño Meat Loaf
Ingredients
- 1½ lb ground beef
- ⅓ cup panko breadcrumbs
- 1 large egg, lightly beaten
- 2 jalapeño peppers, minced (seeded, if desired)
- 2 cloves garlic, minced
- 1 cup shredded sharp Cheddar cheese
- 1 (8-oz) can tomato sauce
- 1 Tbsp Worcestershire sauce
- 1 Tbsp Dijon mustard
- 1 Tbsp honey
- ½ tsp chili powder
Instructions
- Preheat oven to 400°F. Gently combine beef, breadcrumbs, egg, jalapeños, garlic, cheese, and ½ tsp each salt and pepper; transfer to a 9- x 5-inch loaf pan coated with cooking spray.
- Whisk together tomato sauce, Worcestershire sauce, mustard, honey and chili powder; pour over meat loaf.
- Bake 40 to 45 minutes or until center is no longer pink and a meat thermometer reads 165°F; let stand 10 minutes before slicing.
