Jalapeño Meat Loaf

Ingredients

  • 1½ lb ground beef
  • ⅓ cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 2 jalapeño peppers, minced (seeded, if desired)
  • 2 cloves garlic, minced
  • 1 cup shredded sharp Cheddar cheese
  • 1 (8-oz) can tomato sauce
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 1 Tbsp honey
  • ½ tsp chili powder

Instructions

  1. Preheat oven to 400°F. Gently combine beef, breadcrumbs, egg, jalapeños, garlic, cheese, and ½ tsp each salt and pepper; transfer to a 9- x 5-inch loaf pan coated with cooking spray.
  2. Whisk together tomato sauce, Worcestershire sauce, mustard, honey and chili powder; pour over meat loaf.
  3. Bake 40 to 45 minutes or until center is no longer pink and a meat thermometer reads 165°F; let stand 10 minutes before slicing.
