Wild Rice Salad with Chickpeas and Pistachios
Ingredients
- 1 (8.8-oz) pkg microwavable wild rice
- 1 cup frozen peas
- 1½ Tbsp olive oil
- 1½ Tbsp Dijon mustard
- ½ tsp grated lemon rind
- 1½ Tbsp fresh lemon juice
- 1 tsp agave
- ¼ tsp salt
- ¼ tsp pepper
- 1 (15-oz) can chickpeas, drained and rinsed
- 3 carrots, cut into match-sticks
- 1 green onion, chopped
- 2 Tbsp chopped fresh flat-leaf parsley
- 2 Tbsp raw pistachios, toasted
Instructions
- Cook rice and green peas according to package directions. Combine oil, mustard, lemon rind, juice, agave, salt, and pepper.
- Combine rice, green peas, chickpeas, carrots, green onions, parsley, and pistachios; drizzle with oil mixture. Toss to coat.
