Wild Rice Salad with Chickpeas and Pistachios

Ingredients

  • 1 (8.8-oz) pkg microwavable wild rice
  • 1 cup frozen peas
  • 1½ Tbsp olive oil
  • 1½ Tbsp Dijon mustard
  • ½ tsp grated lemon rind
  • 1½ Tbsp fresh lemon juice
  • 1 tsp agave
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 3 carrots, cut into match-sticks
  • 1 green onion, chopped
  • 2 Tbsp chopped fresh flat-leaf parsley
  • 2 Tbsp raw pistachios, toasted

Instructions

  1. Cook rice and green peas according to package directions. Combine oil, mustard, lemon rind, juice, agave, salt, and pepper.
  2. Combine rice, green peas, chickpeas, carrots, green onions, parsley, and pistachios; drizzle with oil mixture. Toss to coat.
