Black Bean-Quinoa Buddha Bowls

Ingredients
- 1½ cups canned black beans, rinsed
- 1⅓ cups cooked quinoa (about ⅓ cup uncooked)
- ½ cup hummus
- 2 Tbsp lime juice
- 1 avocado, diced
- ⅓ cup pico de gallo
- ¼ cup chopped fresh cilantro
Instructions
- Combine beans and quinoa in 2 bowls. Stir hummus and lime juice together in a small bowl; thin with water to desired consistency. Drizzle the hummus dressing over the beans and quinoa. Top with avocado, pico de gallo and cilantro.
