Roast Beef and Creamy Radish Baguettes

Ingredients

  • 5 radishes, thinly sliced
  • ¼ cup reduced-fat sour cream
  • ¼ tsp white wine vinegar
  • ¼ tsp salt
  • ½ tsp pepper
  • 2 dashes of hot sauce
  • 1 cup spring mix
  • 1 (8-oz) multigrain French bread baguette, split horizontally
  • ½ lb deli-sliced low-sodium roast beef

Instructions

  1. Toss together radishes, sour cream, vinegar, salt, pepper, and hot sauce in a bowl.
  2. Arrange spring mix on bottom half of baguette. Top with roast beef and radish salad. Cover with top half of baguette. Cut into 4 equal portions, and wrap tightly in plastic wrap or foil until ready to serve.

Side Dish Ingredients

  • 1 Tbsp fresh lemon juice
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp salt
  • 3 navel oranges, peeled and sectioned
  • 1 small avocado, pitted and diced

Side Dish Instructions

  1. Whisk together lemon juice, oil, and salt in a bowl. Add oranges, and toss well. Stir in avocados just before serving.
