Salmon Caesar Salad Toast

Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • ½ cup Caesar dressing
  • ¼ cup freshly grated Parmesan cheese
  • 6 (6-oz) salmon fillets
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 6 (1.5-oz) ciabatta rolls
  • ¼ cup butter, melted
  • 2 cloves garlic, minced
  • 1 lemon, halved (optional)

Instructions

  1. Preheat broiler. Combine romaine, dressing, and cheese. Toss and set aside.
  2. Brush fillets with oil, and sprinkle with salt and pepper. Place on a large rimmed baking sheet. Broil 5 to 7 minutes or until fish flakes with a fork.
  3. Remove fish from oven, and flake with a fork into chunks; set aside.
  4. Meanwhile, halve ciabatta rolls. Combine butter and garlic in a small bowl. Brush butter mixture on cut sides of rolls. Broil, cut sides up, 1 minute or until toasted.
  5. Layer salad and fish on toasted rolls. Squeeze with lemon juice, if desired. Serve open-faced, if desired.
