Cod with Creamy Lemon-Horseradish Sauce
Green Beans and Roasted Peppers
Ingredients
- 2 (6-oz) cod fillets, patted dry
- ⅛ tsp salt
- ¼ tsp pepper
- 1 tsp olive oil
- 2 Tbsp reduced-fat mayonnaise
- 2 Tbsp reduced-fat sour cream
- ½ Tbsp fresh lemon juice
- ½ Tbsp prepared horseradish
- 1 Tbsp finely chopped green onion
Instructions
- Preheat broiler. Sprinkle fish with salt and pepper; place in a broiler pan coated with cooking spray, and drizzle with oil.
- Broil 4 minutes per side or until fish flakes with a fork.
- Stir together mayonnaise, sour cream, lemon juice, horseradish, and onion; spoon sauce over fish.

- 1 small red bell pepper, halved lengthwise
- ½ lb green beans, ends trimmed
- 1 Tbsp extra virgin olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat broiler. Place pepper, cut sides down, on a baking sheet coated with cooking spray.
- Broil 4 to 5 minutes or until tender and slightly charred. Cool 5 minutes; cut into thin strips.
- Meanwhile, place green beans in a steamer basket over boiling water; cover and steam 5 to 6 minutes or until tender.
- Toss green beans, pepper strips, oil, salt and pepper in a bowl.
