Cod with Creamy Lemon-Horseradish Sauce

Ingredients

  • 2 (6-oz) cod fillets, patted dry
  • ⅛ tsp salt
  • ¼ tsp pepper
  • 1 tsp olive oil
  • 2 Tbsp reduced-fat mayonnaise
  • 2 Tbsp reduced-fat sour cream
  • ½ Tbsp fresh lemon juice
  • ½ Tbsp prepared horseradish
  • 1 Tbsp finely chopped green onion

Instructions

  1. Preheat broiler. Sprinkle fish with salt and pepper; place in a broiler pan coated with cooking spray, and drizzle with oil.
  2. Broil 4 minutes per side or until fish flakes with a fork.
  3. Stir together mayonnaise, sour cream, lemon juice, horseradish, and onion; spoon sauce over fish.

Side Dish Ingredients

  • 1 small red bell pepper, halved lengthwise
  • ½ lb green beans, ends trimmed
  • 1 Tbsp extra virgin olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat broiler. Place pepper, cut sides down, on a baking sheet coated with cooking spray.
  2. Broil 4 to 5 minutes or until tender and slightly charred. Cool 5 minutes; cut into thin strips.
  3. Meanwhile, place green beans in a steamer basket over boiling water; cover and steam 5 to 6 minutes or until tender.
  4. Toss green beans, pepper strips, oil, salt and pepper in a bowl.
