Greek Grilled Veggies and Rice

Strawberry and Mixed Greens Salad

Ingredients

  • 2 zucchini, sliced
  • 2 yellow squash, sliced
  • 2 red bell peppers, cut into 1-inch chunks
  • 1 red onion, sliced
  • 1 lb asparagus, trimmed
  • ½ cup balsamic vinaigrette
  • 1½ cups long-grain white rice
  • 1 (8-oz) pkg feta cheese, crumbled
  • 3 Tbsp fresh oregano leaves

Instructions

  1. Preheat grill or grill pan to medium-high heat. Toss together vegetables and vinaigrette; let stand 15 minutes.
  2. Meanwhile, cook rice according to package directions.
  3. Drain vegetables, discarding marinade. Place vegetables in a large grill basket. Grill vegetables 3 to 4 minutes per side or until tender.
  4. Divide rice among 6 plates; top with vegetables. Sprinkle with cheese and oregano.

Side Dish Ingredients

  • 1 (12-oz) pkg classic salad mix
  • 1 (16-oz) pkg strawberries, hulled and sliced
  • ⅓ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients just before serving.
