Greek Grilled Veggies and Rice
Strawberry and Mixed Greens SaladIngredients
- 2 zucchini, sliced
- 2 yellow squash, sliced
- 2 red bell peppers, cut into 1-inch chunks
- 1 red onion, sliced
- 1 lb asparagus, trimmed
- ½ cup balsamic vinaigrette
- 1½ cups long-grain white rice
- 1 (8-oz) pkg feta cheese, crumbled
- 3 Tbsp fresh oregano leaves
Instructions
- Preheat grill or grill pan to medium-high heat. Toss together vegetables and vinaigrette; let stand 15 minutes.
- Meanwhile, cook rice according to package directions.
- Drain vegetables, discarding marinade. Place vegetables in a large grill basket. Grill vegetables 3 to 4 minutes per side or until tender.
- Divide rice among 6 plates; top with vegetables. Sprinkle with cheese and oregano.

- 1 (16-oz) pkg strawberries, hulled and sliced
- ⅓ cup balsamic vinaigrette
