Pesto-Tomato Fish

Lemony Orzo and Steamed Broccoli

Ingredients

  • 6 (6-oz) tilapia fillets
  • ¾ cup pesto
  • 2 Roma tomatoes, thinly sliced
  • 1 cup panko breadcrumbs
  • 2 Tbsp olive oil
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 450°F. Place fish on a parchment paper-lined rimmed baking sheet; season lightly with salt and pepper.
  2. Spread pesto on fish; top with tomato slices. Bake 8 to 10 minutes or until fish flakes with a fork.
  3. Meanwhile, cook panko in hot oil in a large skillet over medium-high heat, stirring until panko is browned. Stir in lemon zest, and season with salt and pepper to taste.
  4. Sprinkle panko mixture over fish.

  • 1½ cups orzo
  • 1 Tbsp lemon zest
  • 3 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Prepare orzo according to package directions. Stir in lemon juice, lemon zest, oil, and salt and pepper to taste.
  2. Steam broccoli according to package directions; season with salt and pepper to taste.
