Pesto-Tomato Fish
Lemony Orzo and Steamed BroccoliIngredients
- 6 (6-oz) tilapia fillets
- ¾ cup pesto
- 2 Roma tomatoes, thinly sliced
- 1 cup panko breadcrumbs
- 2 Tbsp olive oil
- 1 tsp lemon zest
Instructions
- Preheat oven to 450°F. Place fish on a parchment paper-lined rimmed baking sheet; season lightly with salt and pepper.
- Spread pesto on fish; top with tomato slices. Bake 8 to 10 minutes or until fish flakes with a fork.
- Meanwhile, cook panko in hot oil in a large skillet over medium-high heat, stirring until panko is browned. Stir in lemon zest, and season with salt and pepper to taste.
- Sprinkle panko mixture over fish.

- 1 Tbsp lemon zest
- 3 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1 (12-oz) pkg frozen broccoli florets
Side Dish Instructions
- Prepare orzo according to package directions. Stir in lemon juice, lemon zest, oil, and salt and pepper to taste.
- Steam broccoli according to package directions; season with salt and pepper to taste.
