Mediterranean Tuna Pasta Salad

Ingredients

  • 6 oz whole-grain penne pasta
  • 1 (11-oz) pkg chunk light tuna in water, drained
  • ⅓ cup pitted kalamata olives, halved
  • 2 Tbsp capers
  • ¼ cup chopped red onion
  • ¼ cup sliced fresh basil
  • 3 Tbsp fresh lemon juice
  • ¼ cup extra virgin olive oil
  • ⅛ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook pasta according to package directions.
  2. Combine pasta, tuna, olives, capers, onion, and basil in large bowl.
  3. Whisk together lemon juice, oil, salt, and pepper in a medium bowl. Pour over pasta, stirring to coat.
