Pistachio-Date-Orange Chicken
Minted Couscous
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- 1½ Tbsp garam masala
- 3 Tbsp olive oil
- 1¼ cups mandarin orange segments (such as Dole)
- ¾ cup pitted and chopped Medjool dates
- ⅓ cup chopped pistachios
- 2 Tbsp chopped fresh mint
Instructions
- Sprinkle chicken with salt; rub both sides with garam masala.
- Cook, in batches, in 1½ Tbsp hot oil per batch in a large skillet over medium-high heat 5 minutes; turn and cook 6 minutes or until done.
- Meanwhile, combine oranges, dates, nuts, and mint in a bowl. Serve with chicken.

- Cook couscous according to package directions. Stir in mint, oil, and salt.
