Pistachio-Date-Orange Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • 1½ Tbsp garam masala
  • 3 Tbsp olive oil
  • 1¼ cups mandarin orange segments (such as Dole)
  • ¾ cup pitted and chopped Medjool dates
  • ⅓ cup chopped pistachios
  • 2 Tbsp chopped fresh mint

Instructions

  1. Sprinkle chicken with salt; rub both sides with garam masala.
  2. Cook, in batches, in 1½ Tbsp hot oil per batch in a large skillet over medium-high heat 5 minutes; turn and cook 6 minutes or until done.
  3. Meanwhile, combine oranges, dates, nuts, and mint in a bowl. Serve with chicken.

Side Dish Instructions

  1. Cook couscous according to package directions. Stir in mint, oil, and salt.
