Curried Chicken Salad
Grapes and Multi-Grain Crackers
Ingredients
- 1 deli rotisserie chicken, shredded
- ½ cup unsweetened dried cranberries
- 2 Tbsp chopped fresh cilantro
- ¼ cup whole natural almonds, chopped
- ½ cup olive-oil mayonnaise
- 1 Tbsp curry powder
- 1 Tbsp lemon juice
- 1 Tbsp honey
- ½ tsp salt
- ½ tsp pepper
Instructions
- Combine shredded chicken, cranberries, cilantro, and nuts in a medium bowl.
- Stir together mayonnaise, curry powder, lemon juice, honey, salt, and pepper in a small bowl.
- Pour over chicken mixture; stir until blended. Chill salad if time allows.
Side Dish Ingredients
- 2 cups seedless red grapes
- 1 (4.5-oz) pkg gluten-free sea salt multigrain crackers (such as Crunchmaster)
