Curried Chicken Salad

Ingredients

  • 1 deli rotisserie chicken, shredded
  • ½ cup unsweetened dried cranberries
  • 2 Tbsp chopped fresh cilantro
  • ¼ cup whole natural almonds, chopped
  • ½ cup olive-oil mayonnaise 
  • 1 Tbsp curry powder
  • 1 Tbsp lemon juice
  • 1 Tbsp honey
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Combine shredded chicken, cranberries, cilantro, and nuts in a medium bowl.
  2. Stir together mayonnaise, curry powder, lemon juice, honey, salt, and pepper in a small bowl.
  3. Pour over chicken mixture; stir until blended. Chill salad if time allows.

Side Dish Ingredients

  • 2 cups seedless red grapes
  • 1 (4.5-oz) pkg gluten-free sea salt multigrain crackers (such as Crunchmaster)

Side Dish Instructions

  1. Serve grapes and crackers with chicken salad.
