Balsamic Onion-Smothered Burgers with Goat Cheese
Asparagus with Almonds
Ingredients
- 2 lb ground beef
- 1 clove garlic, minced
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- 2 red onions, halved and thinly sliced
- 2 Tbsp balsamic vinegar
- 2 cups spring mix salad greens
- 1 (4-oz) pkg goat cheese, crumbled
Instructions
- Combine beef, garlic, salt, and pepper; shape into 6 patties.
- Heat a grill pan or large nonstick skillet coated with cooking spray over medium-high heat. Cook patties, in batches if necessary, 4 to 5 minutes per side or until no longer pink.
- Meanwhile, cook onions in hot oil in a large skillet over medium heat, stirring occasionally, 10 minutes or until tender. Stir in vinegar; cook 1 minute or until vinegar evaporates.
- Divide salad greens among 4 plates; top each with a patty, onions, and cheese.
Side Dish Ingredients
- 2 lb asparagus, trimmed
- ½ cup sliced almonds
- 3 Tbsp butter, melted
- ½ tsp kosher salt
Side Dish Instructions
- Preheat oven to 450°F. Cook asparagus in boiling salted water to cover in a saucepan 3 minutes or until almost crisp-tender; drain well.
- Combine asparagus, nuts, and butter on a large rimmed baking sheet; spread in a single layer. Sprinkle with salt.
- Bake 4 minutes or until nuts are browned and asparagus blisters slightly.
