Grilled Sausage-and-Pepper Kabobs

Ingredients

  • 1 (12-oz) pkg smoked Italian chicken sausage links (such as Aidell's), cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 Tbsp olive oil

Instructions

  1. Preheat grill to medium heat. Thread sausage and peppers alternately onto metal skewers; brush with oil.
  2. Grill kabobs, covered, 16 to 20 minutes, turning occasionally, or until sausage is browned and peppers are tender.

Side Dish Ingredients

  • 4 cups baby arugula
  • ½ (6-oz) pkg blueberries
  • ¼ cup thinly sliced red onion
  • 3 Tbsp refrigerated balsamic vinaigrette
  • ¼ cup crumbled goat cheese

Side Dish Instructions

  1. Combine arugula, blueberries, onion, and vinaigrette in a bowl; toss. Sprinkle with cheese.
