Grilled Sausage-and-Pepper Kabobs
Balsamic Blueberry-Arugula Salad
Ingredients
- 1 (12-oz) pkg smoked Italian chicken sausage links (such as Aidell's), cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 Tbsp olive oil
Instructions
- Preheat grill to medium heat. Thread sausage and peppers alternately onto metal skewers; brush with oil.
- Grill kabobs, covered, 16 to 20 minutes, turning occasionally, or until sausage is browned and peppers are tender.
Side Dish Ingredients
- 4 cups baby arugula
- ½ (6-oz) pkg blueberries
- ¼ cup thinly sliced red onion
- 3 Tbsp refrigerated balsamic vinaigrette
- ¼ cup crumbled goat cheese
Side Dish Instructions
- Combine arugula, blueberries, onion, and vinaigrette in a bowl; toss. Sprinkle with cheese.
