Raspberry-Barbecue-Glazed Chicken Thighs
Charred Squash Salad
Ingredients
- ¼ cup barbecue sauce
- 2 Tbsp raspberry fruit spread (or other fruit spread)
- 1 Tbsp finely chopped red onion
- 1 tsp Worcestershire sauce
- 1 tsp apple cider vinegar
- ½ tsp orange zest
- 4 boneless, skinless chicken thighs (about ¾ lb)
Instructions
- Preheat grill to medium-high heat.
- Whisk together barbecue sauce, fruit spread, onion, Worcestershire sauce, and vinegar in a saucepan.
- Bring to a boil over medium-high heat, and simmer until slightly thickened. Remove from heat, and stir in orange zest.
- Grill chicken, uncovered, 10 to 12 minutes or until done, turning occasionally and basting with sauce mixture.
Side Dish Ingredients
- 1 yellow squash, cut into planks
- 1 tsp minced garlic
- 1 Tbsp olive oil, divided
- 1 tsp lemon juice
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 cups mixed greens
- 2 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Preheat grill to medium-high heat. Combine squash, garlic, and ½ Tbsp oil; place on a grill rack. Grill, covered, 2 to 3 minutes per side or until well marked on both sides. Coarsely chop.
- Meanwhile, whisk together ½ Tbsp oil, lemon juice, salt, and pepper.
- Gently combine greens, squash, and dressing in a large bowl; sprinkle with cheese.
