Spanish-Style Fish

Green Beans with Oranges and Olives

Ingredients

  • ½ cup fresh basil leaves
  • ¼ cup sliced almonds
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil, divided
  • 1 tomato, coarsely chopped
  • ¼ cup chopped roasted red peppers
  • 6 cod fillets (or other firm, white fish)
  • 1 tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. Pulse basil, nuts, garlic, and 2 Tbsp oil in a food processor until finely chopped. Add tomato and red peppers; pulse until smooth.
  2. Sprinkle fish with salt and pepper. Cook in 1 Tbsp hot oil in a large skillet over medium-high heat 3 minutes; reduce heat to medium, and turn fish.
  3. Pour sauce around fish; cook 5 minutes or until fish flakes with a fork. Serve fish with sauce.

  • 2 lb green beans, trimmed
  • 3 Tbsp olive oil, divided
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 cup pitted olives
  • 3 oranges, peeled and coarsely chopped

Side Dish Instructions

  1. Preheat oven to 450°F. Toss beans with 2 Tbsp oil, salt, and pepper on a rimmed baking sheet. Bake 10 minutes or until crisp-tender.
  2. Toss together olives, oranges, and 1 Tbsp oil; spoon over beans.
