Spanish-Style Fish
Green Beans with Oranges and Olives
Ingredients
- ½ cup fresh basil leaves
- ¼ cup sliced almonds
- 2 cloves garlic, minced
- 3 Tbsp olive oil, divided
- 1 tomato, coarsely chopped
- ¼ cup chopped roasted red peppers
- 6 cod fillets (or other firm, white fish)
- 1 tsp kosher salt
- ¼ tsp pepper
Instructions
- Pulse basil, nuts, garlic, and 2 Tbsp oil in a food processor until finely chopped. Add tomato and red peppers; pulse until smooth.
- Sprinkle fish with salt and pepper. Cook in 1 Tbsp hot oil in a large skillet over medium-high heat 3 minutes; reduce heat to medium, and turn fish.
- Pour sauce around fish; cook 5 minutes or until fish flakes with a fork. Serve fish with sauce.

- 2 lb green beans, trimmed
- 3 Tbsp olive oil, divided
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1 cup pitted olives
- 3 oranges, peeled and coarsely chopped
Side Dish Instructions
- Preheat oven to 450°F. Toss beans with 2 Tbsp oil, salt, and pepper on a rimmed baking sheet. Bake 10 minutes or until crisp-tender.
- Toss together olives, oranges, and 1 Tbsp oil; spoon over beans.
