Spinach-Apple Turkey Burgers

Ingredients

  • 2 Tbsp olive oil, divided
  • ¼ cup diced red onion
  • ¾ cup finely chopped apple
  • ½ (9-oz) pkg baby spinach
  • ¼ tsp dried sage
  • ¼ tsp garlic salt
  • ½ lb ground turkey
  • 2 tsp coarse-grain Dijon mustard
  • 2 whole-grain hamburger buns
  • 2 lettuce leaves
  • 2 thin slices tomato
  • 6 cucumber slices

Instructions

  1. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.
  2. Cook onion, apple, spinach, sage, and garlic salt in hot oil 7 minutes or until apple is soft and liquid is evaporated; remove from heat.
  3. Wipe skillet clean with a paper towel.
  4. Combine turkey and onion mixture; shape into 2 (½-inch thick) patties.
  5. Heat 1 Tbsp oil in skillet over medium-high heat; add patties, and cook 5 to 6 minutes per side or until done.
  6. Spread mustard on one side of each hamburger bun.
  7. Place lettuce, tomato, cucumber and patties on buns.

Side Dish Ingredients

  • 1⅓ cups carrot sticks

Side Dish Instructions

  1. Serve alongside burgers.
