Ground Beef Lettuce Wraps

Ingredients

  • 1½ lb ground beef
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup creamy almond butter (or use peanut butter)
  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 head green leaf lettuce, leaves separated (or use iceberg lettuce)
  • 1 lime, cut into wedges

Instructions

  1. Cook beef, salt, and pepper in a large skillet over medium-high heat 8 to 10 minutes or until beef is browned and crumbly; keep warm.
  2. Whisk together almond butter, soy sauce, vinegar, and garlic.
  3. Divide beef among desired number of lettuce leaves; drizzle with almond sauce.
  4. Serve with lime wedges. Top with Carrot Salad recipe, or serve it on the side.

Side Dish Ingredients

  • 3 Tbsp lime juice
  • 2 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 3 carrots, grated
  • 1 jicama, peeled and grated (see Note)
  • 2 avocados, chopped

Side Dish Instructions

  1. Whisk together lime juice, oil, and salt in a bowl. Add carrots and jicama, and toss.
  2. Stir in avocados just before serving.
