Chicken Pesto Linguine
Italian Garlic BreadIngredients
- 1 (16-oz) pkg linguine
- 1 lb boneless, skinless chicken breasts
- 3 Tbsp olive oil
- 1 pint grape tomatoes
- 1 (6.5-oz) jar basil pesto
- ¼ tsp crushed red pepper
Instructions
- Cook pasta according to package directions.
- Meanwhile, cut chicken into bite-size pieces; lightly sprinkle with salt and pepper. Cook chicken in hot oil in a large skillet over medium heat until browned. Add tomatoes, and cook until tomatoes begin to soften and burst.
- Stir in pesto and crushed red pepper; cook 2 minutes or until thoroughly heated, stirring often. Toss with hot pasta.

- ¼ cup butter, softened
- 1 tsp Italian seasoning
- 2 tsp minced garlic
- 1 (16-oz) loaf French bread, cut in half lengthwise
Side Dish Instructions
- Preheat broiler.
- Combine butter, Italian seasoning, and garlic in a small bowl; spread over cut sides of bread. Broil bread just until toasted; cut into slices.
