Chicken Pesto Linguine

Ingredients

  • 1 (16-oz) pkg linguine
  • 1 lb boneless, skinless chicken breasts
  • 3 Tbsp olive oil
  • 1 pint grape tomatoes
  • 1 (6.5-oz) jar basil pesto
  • ¼ tsp crushed red pepper

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cut chicken into bite-size pieces; lightly sprinkle with salt and pepper. Cook chicken in hot oil in a large skillet over medium heat until browned. Add tomatoes, and cook until tomatoes begin to soften and burst.
  3. Stir in pesto and crushed red pepper; cook 2 minutes or until thoroughly heated, stirring often. Toss with hot pasta.

  • ¼ cup butter, softened
  • 1 tsp Italian seasoning
  • 2 tsp minced garlic
  • 1 (16-oz) loaf French bread, cut in half lengthwise

Side Dish Instructions

  1. Preheat broiler.
  2. Combine butter, Italian seasoning, and garlic in a small bowl; spread over cut sides of bread. Broil bread just until toasted; cut into slices.
