Indian Butter Chicken

Tandoori Spiced Broccolini

Ingredients

  • 1 Tbsp coconut oil (or use olive oil)
  • 1½ lb boneless, skinless chicken thighs, quartered
  • ½ cup sliced onion
  • 1 (15-oz) jar butter chicken sauce (such as Patak's; see Note)
  • ½ cup tomato sauce
  • 1 Tbsp tandoori spice (such as Manitou)
  • ½ cup half-and-half

Instructions

  1. Melt oil in a large skillet over high heat. Add chicken to skillet, and cook 3 minutes per side.
  2. Add onion; cook 5 minutes or until tender.
  3. Add butter chicken sauce, tomato sauce, and tandoori spice.
  4. Reduce heat; add half and half, and simmer 10 to 15 minutes or until chicken is done.

Side Dish Ingredients

  • 1½ lb Broccolini 
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1½ Tbsp tandoori spice (such as Manitou)
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together Broccolini, oil, garlic, and tandoori spice on a rimmed baking sheet; sprinkle with salt and pepper.
  2. Bake 10 to 15 minutes or until tender.
