Pizza Frittata with Sausage and Kale
Ingredients
- 12 large eggs
- ½ cup milk
- ½ cup freshly grated Parmesan cheese
- ½ tsp pepper
- 1 small onion, finely chopped
- 2 Tbsp olive oil
- ½ lb Italian sausage, casings removed
- 3 cups baby kale
- 1 cup no-sugar-added marinara sauce (such as Rao's)
- 1½ cups shredded mozzarella cheese
- Fresh basil leaves (optional)
Instructions
- Preheat oven to 350°F. Whisk together eggs, milk, Parmesan, and pepper.
- Cook onion in hot oil in a large cast-iron or ovenproof skillet over medium heat 5 minutes or until tender.
- Add sausage; cook 5 minutes or until browned. Add kale and cook 1 minute or just until wilted, stirring occasionally. Reduce heat; stir in egg mixture.
- Bake 18 minutes or until almost set.
- Preheat broiler. Spread sauce over frittata; top with mozzarella. Broil 2 to 3 minutes or until cheese is browned and sauce is bubbly. Sprinkle with basil, if desired.
