Pizza Frittata with Sausage and Kale

Ingredients

  • 12 large eggs
  • ½ cup milk
  • ½ cup freshly grated Parmesan cheese
  • ½ tsp pepper
  • 1 small onion, finely chopped
  • 2 Tbsp olive oil
  • ½ lb Italian sausage, casings removed
  • 3 cups baby kale 
  • 1 cup no-sugar-added marinara sauce (such as Rao's)
  • 1½ cups shredded mozzarella cheese
  • Fresh basil leaves (optional)

Instructions

  1. Preheat oven to 350°F.  Whisk together eggs, milk, Parmesan, and pepper.
  2. Cook onion in hot oil in a large cast-iron or ovenproof skillet over medium heat 5 minutes or until tender.
  3. Add sausage; cook 5 minutes or until browned. Add kale and cook 1 minute or just until wilted, stirring occasionally. Reduce heat; stir in egg mixture.
  4. Bake 18 minutes or until almost set.
  5. Preheat broiler. Spread sauce 
over frittata; top with mozzarella. Broil 2 to 3 minutes or until cheese is browned and sauce is bubbly. Sprinkle with basil, if desired.
