Greek Beef Skewers

Ingredients

  • ½ lemon
  • 1 lb ground beef
  • 1 large egg white, lightly beaten
  • ¼ cup grated onion
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • ½ tsp pepper
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat oven to 400°F. Grate zest from lemon. Combine zest and remaining ingredients. Shape into 9 oblong patties around wooden or metal skewers. Place skewers on a rack on a foil-lined rimmed baking sheet.
  2. Bake 20 to 25 minutes or until done. Immediately remove skewers from rack.

  • 1 (12-oz) pkg frozen riced cauliflower
  • 1½ tsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup chopped red bell pepper
  • ½ cup chopped fresh parsley
  • ¼ cup lemon juice
  • 2 Tbsp chopped fresh mint
  • 2 green onions, chopped
  • 1 clove garlic, minced

Side Dish Instructions

  1. Preheat oven to 400°F. Combine cauliflower, oil, salt, and pepper on a large rimmed baking sheet. Bake 25 minutes or until browned, stirring once.
  2. Transfer cauliflower to a bowl, and add remaining ingredients. Cover and chill until ready to serve.
