Broiled Salmon with Blistered Tomatoes
Farro Salad with Grapes and Feta
Ingredients
- 2 pints grape tomatoes
- ¼ cup olive oil, divided
- 4 cloves garlic, coarsely chopped
- 6 (6-oz) salmon fillets
- 1 tsp kosher salt
- ¼ tsp pepper
- 3 Tbsp chopped fresh chives
Instructions
- Preheat broiler. Toss together tomatoes, 3 Tbsp oil and garlic on a rimmed baking sheet.
- Broil 8 minutes or until tomatoes are blistered and softened.
- Brush salmon with 1 Tbsp oil on a greased baking sheet; sprinkle with salt and pepper.
- Broil 5 minutes or until fish flakes with a fork.
- Serve salmon with tomato mixture; sprinkle with chives.
Side Dish Ingredients
- 2 cups farro
- ¼ cup extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 1½ Tbsp honey
- 3 cups seedless red grapes, cut in half
- ¾ cup crumbled feta cheese
- ½ cup chopped red onion
- 2 Tbsp chopped fresh mint (or use basil)
Side Dish Instructions
- Cook farro according to package directions; drain.
- Toss hot cooked farro with oil, lemon juice, and honey. Toss with grapes, feta, onion, mint, and salt and pepper to taste.
