Pasta and Mushrooms in Garlic Browned Butter
Caesar Salad
Ingredients
- 1 (16-oz) pkg spaghetti
- ½ cup butter
- 1 (16-oz) pkg whole mushrooms, thinly sliced
- ½ onion, thinly sliced
- 4 cloves garlic, thinly sliced
- 2 tsp fresh lemon juice
- 1 cup panko breadcrumbs
- 2 tsp minced garlic
- 2 Tbsp olive oil
Instructions
- Cook pasta in salted water 2 minutes less than package directs; drain, reserving 1 cup pasta water.
- Meanwhile, melt butter in a large, deep skillet over medium-high heat. Add mushrooms, onion, and sliced garlic; cook until mushrooms are browned. Add pasta and reserved 1 cup pasta water; cook, stirring occasionally, until pasta is tender and liquid is absorbed. Stir in lemon juice.
- Meanwhile, cook panko and minced garlic in hot oil in a skillet over medium-high heat until panko is browned. Season lightly with salt and pepper.
- Divide pasta mixture among 6 bowls; sprinkle with panko mixture.
