Summer Tortellini

Ingredients

  • 3 (9-oz) pkg refrigerated tortellini (any flavor; such as Buitoni)
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 red bell pepper, sliced
  • 2 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 (24-oz) jar natural marinara sauce (such as Rao’s)
  • 1 tsp crushed red pepper

Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. Meanwhile, cook garlic in hot oil in a large skillet over medium-high heat 1 to 2 minutes or until fragrant.
  3. Add bell pepper, squash, and zucchini; sauté 5 to 7 minutes or until lightly browned and crisp-tender.
  4. Add tortellini, sauce, and red pepper to skillet; cook until thoroughly heated.
