Summer Tortellini

Ingredients
- 3 (9-oz) pkg refrigerated tortellini (any flavor; such as Buitoni)
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 2 red bell pepper, sliced
- 2 yellow squash, sliced
- 1 zucchini, sliced
- 1 (24-oz) jar natural marinara sauce (such as Rao’s)
- 1 tsp crushed red pepper
Instructions
- Cook tortellini according to package directions. Drain and set aside.
- Meanwhile, cook garlic in hot oil in a large skillet over medium-high heat 1 to 2 minutes or until fragrant.
- Add bell pepper, squash, and zucchini; sauté 5 to 7 minutes or until lightly browned and crisp-tender.
- Add tortellini, sauce, and red pepper to skillet; cook until thoroughly heated.
