Roasted Cauliflower-Lemon Pappardelle

Ingredients
- 2 lemons
- 1 (16-oz) pkg cauliflower florets
- ¼ cup olive oil
- ½ tsp kosher salt, divided
- 3 cloves garlic
- 1½ (8.8-oz) pkg pappardelle pasta
- 3 Tbsp butter
- 1¼ cups freshly grated Parmesan cheese
- ⅓ cup chopped fresh parsley
- ½ tsp pepper (see Note)
Instructions
- Preheat oven to 450°F. Grate zest and squeeze juice from lemons.
- Toss together cauliflower, oil, ¼ tsp salt, and garlic on a rimmed baking sheet. Spread in a single layer.
- Roast 15 to 20 minutes or until lightly browned. Mince roasted garlic.
- Meanwhile, cook pasta according to package directions. Toss together pasta, butter, cauliflower, garlic, lemon zest, lemon juice, cheese, parsley, ¼ tsp salt, and pepper.
