Roasted Cauliflower-Lemon Pappardelle

Ingredients

  • 2 lemons
  • 1 (16-oz) pkg cauliflower florets
  • ¼ cup olive oil
  • ½ tsp kosher salt, divided
  • 3 cloves garlic
  • 1½ (8.8-oz) pkg pappardelle pasta
  • 3 Tbsp butter
  • 1¼ cups freshly grated Parmesan cheese
  • ⅓ cup chopped fresh parsley
  • ½ tsp pepper (see Note)

Instructions

  1. Preheat oven to 450°F. Grate zest and squeeze juice from lemons.
  2. Toss together cauliflower, oil, ¼ tsp salt, and garlic on a rimmed baking sheet. Spread in a single layer.
  3. Roast 15 to 20 minutes or until lightly browned. Mince roasted garlic.
  4. Meanwhile, cook pasta according to package directions. Toss together pasta, butter, cauliflower, garlic, lemon zest, lemon juice, cheese, parsley, ¼ tsp salt, and pepper.
