Shrimp and "Grits"

Ingredients

  • ¾ lb peeled and deveined, large raw shrimp
  • 2 tsp Old Bay seasoning
  • 1½ Tbsp butter, divided
  • 1 (12-oz) pkg frozen cauliflower florets
  • ¼ cup heavy cream
  • ⅓ cup shredded sharp Cheddar cheese
  • ¼ tsp onion powder
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper

Instructions

  1. Sprinkle shrimp with seasoning. Melt 1 Tbsp butter in a large skillet over medium-high heat; cook 2 to 3 minutes or just until shrimp turn pink.
  2. Steam cauliflower according to package directions.
  3. Process cauliflower, cream, cheese, ½ Tbsp butter, onion powder, salt, and pepper in a food processor until smooth.
  4. Serve shrimp and grits with Collard Greens and Bacon recipe.

Side Dish Ingredients

  • 2 slices bacon, chopped
  • 1 shallot, sliced
  • ¼ tsp crushed red pepper
  • ½ (16-oz) pkg chopped collard greens
  • 1½ Tbsp low-sodium chicken broth
  • ½ Tbsp apple cider vinegar
  • ¼ tsp pepper
  • ⅛ tsp kosher salt

Side Dish Instructions

  1. Cook bacon in a large skillet over medium heat 8 minutes or until crisp; drain, reserving drippings in skillet.
  2. Add shallot and red pepper to hot drippings; sauté until shallots are tender.
  3. Add collard greens; sauté 5 minutes or until bright green.
  4. Reduce heat; stir in broth, vinegar, pepper, and salt. Cook 2 minutes or until liquid evaporates.
