Shrimp and "Grits"
Collard Greens and Bacon
Ingredients
- ¾ lb peeled and deveined, large raw shrimp
- 2 tsp Old Bay seasoning
- 1½ Tbsp butter, divided
- 1 (12-oz) pkg frozen cauliflower florets
- ¼ cup heavy cream
- ⅓ cup shredded sharp Cheddar cheese
- ¼ tsp onion powder
- ⅛ tsp kosher salt
- ⅛ tsp pepper
Instructions
- Sprinkle shrimp with seasoning. Melt 1 Tbsp butter in a large skillet over medium-high heat; cook 2 to 3 minutes or just until shrimp turn pink.
- Steam cauliflower according to package directions.
- Process cauliflower, cream, cheese, ½ Tbsp butter, onion powder, salt, and pepper in a food processor until smooth.
- Serve shrimp and grits with Collard Greens and Bacon recipe.
Side Dish Ingredients
- 2 slices bacon, chopped
- 1 shallot, sliced
- ¼ tsp crushed red pepper
- ½ (16-oz) pkg chopped collard greens
- 1½ Tbsp low-sodium chicken broth
- ½ Tbsp apple cider vinegar
- ¼ tsp pepper
- ⅛ tsp kosher salt
Side Dish Instructions
- Cook bacon in a large skillet over medium heat 8 minutes or until crisp; drain, reserving drippings in skillet.
- Add shallot and red pepper to hot drippings; sauté until shallots are tender.
- Add collard greens; sauté 5 minutes or until bright green.
- Reduce heat; stir in broth, vinegar, pepper, and salt. Cook 2 minutes or until liquid evaporates.
