Hibachi-Style Teriyaki Chicken and Vegetables

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1½ Tbsp olive oil, divided
  • 1 large zucchini, cut into chunks
  • ½ onion, coarsely chopped
  • 1 (8-oz) pkg sliced mushrooms
  • 3 Tbsp low-sodium soy sauce
  • 1½ Tbsp honey
  • 1 Tbsp sesame oil
  • 1½ tsp toasted sesame seeds

Instructions

  1. Cook chicken in 1½ tsp hot oil in a large nonstick skillet over medium-high heat 5 minutes or until browned. Remove chicken from skillet, and keep warm.
  2. Sauté zucchini, onion, and mushrooms in 1 Tbsp hot oil in skillet 8 minutes or until very tender.
  3. Return chicken to skillet. Whisk together remaining ingredients. Pour over chicken mixture, and cook 2 minutes or until sauce is thickened. Serve over Simple Cauli-Rice recipe.

Side Dish Ingredients

  • 1 (16-oz) pkg cauliflower crumbles (such as Green Giant)
  • ¼ tsp garlic salt
  • 1 Tbsp vegetable oil
  • ¼ cup low-sodium chicken broth

Side Dish Instructions

  1. Sauté cauliflower and garlic salt in hot oil in a large skillet over medium-high heat 3 minutes; add broth. Cover and cook 15 minutes or until cauliflower is tender.
