Pan-Fried Pineapple with Coconut Gelato

Ingredients
- 1 pineapple, peeled
- 1 Tbsp olive oil
- 1 lime, halved
- 2 pints coconut gelato (such as Talenti)
- 1 (12-oz) jar caramel sauce
- 1 (3.17-oz) pkg toasted coconut chips
Instructions
- Cut pineapple into 8 slices. Cut core from center of each round using a small cookie cutter or knife.
- Preheat a nonstick skillet over medium heat. Cook pineapple slices until golden brown, 2 to 3 minutes per side. Remove from heat, and transfer pineapple to plates.
- Drizzle pineapple with lime juice. Top each ring with a scoop of gelato. Drizzle with desired amount of caramel sauce, and sprinkle with coconut chips.
