Pan-Fried Pineapple with Coconut Gelato

Ingredients

  • 1 pineapple, peeled
  • 1 Tbsp olive oil
  • 1 lime, halved
  • 2 pints coconut gelato (such as Talenti)
  • 1 (12-oz) jar caramel sauce
  • 1 (3.17-oz) pkg toasted coconut chips

Instructions

  1. Cut pineapple into 8 slices. Cut core from center of each round using a small cookie cutter or knife.
  2. Preheat a nonstick skillet over medium heat. Cook pineapple slices until golden brown, 2 to 3 minutes per side. Remove from heat, and transfer pineapple to plates.
  3. Drizzle pineapple with lime juice. Top each ring with a scoop of gelato. Drizzle with desired amount of caramel sauce, and sprinkle with coconut chips.
