Cheesy Beef and Squash Casserole
Sauteed Garlic Broccoli
Ingredients
- 3 yellow squash, sliced
- 1½ tsp olive oil
- ¾ lb ground beef
- ½ cup chopped onion
- ¼ tsp salt
- ¼ tsp pepper
- ½ (10.5-oz) can cream of mushroom soup
- ⅔ cup shredded Cheddar cheese, divided
Instructions
- Preheat oven to 350 F°. Sauté squash in hot oil in a large skillet 5 minutes. Remove from skillet.
- Add beef, onion, salt, and pepper to skillet. Cook 10 minutes or until beef is browned and crumbly. Drain; stir in soup.
- Spoon half of beef mixture into a small baking dish coated with cooking spray. Cover with sautéed squash and ⅓ cup cheese. Repeat with beef mixture and squash.
- Cover and bake 20 minutes. Uncover; top with ⅓ cup cheese. Bake, uncovered, 5 minutes longer.
Side Dish Ingredients
- ¾ lb broccoli crowns, cut into florets
- 1½ tsp olive oil
- 1 small clove garlic, minced
- 2 Tbsp water
- ¼ tsp salt
Side Dish Instructions
- Cook broccoli in hot oil in a large skillet over medium-high heat 5 minutes. Add garlic and water.
- Cover and cook 3 minutes or until crisp-tender. Toss with salt.
