Quinoa-Spinach Turkey Burgers
Garlicky Roasted Zucchini
Ingredients
- ⅓ cup quinoa
- 1½ cups spinach, divided
- 1½ lb ground turkey
- ½ cup finely chopped onion
- 2 tsp Italian seasoning
- ½ tsp salt
- 1 (4-oz) pkg crumbled goat cheese
- 2 Tbsp olive oil
- 6 hamburger buns (preferably whole wheat)
Instructions
- Cook quinoa according to package directions.
- Meanwhile, chop 1 cup spinach. Combine quinoa, chopped spinach, turkey, onion, seasoning, and salt in a large bowl. Gently fold in cheese until well mixed, but crumbles are still visible. Shape mixture into 6 patties.
- Cook patties, in batches, in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until lightly browned. Turn and cook 5 minutes or until patties are no longer pink in center.
- Serve patties on buns with spinach leaves.

- 3 zucchini, cut into wedges
- 3 cloves garlic, minced
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together zucchini, garlic, oil, salt, and pepper on a baking sheet coated with cooking spray; spread in a single layer.
- Bake 20 to 25 minutes or until browned and tender, stirring once after 12 minutes.
