Quinoa-Spinach Turkey Burgers

Ingredients

  • ⅓ cup quinoa
  • 1½ cups spinach, divided
  • 1½ lb ground turkey
  • ½ cup finely chopped onion
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • 1 (4-oz) pkg crumbled goat cheese
  • 2 Tbsp olive oil
  • 6 hamburger buns (preferably whole wheat)

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, chop 1 cup spinach. Combine quinoa, chopped spinach, turkey, onion, seasoning, and salt in a large bowl. Gently fold in cheese until well mixed, but crumbles are still visible. Shape mixture into 6 patties.
  3. Cook patties, in batches, in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until lightly browned. Turn and cook 5 minutes or until patties are no longer pink in center.
  4. Serve patties on buns with spinach leaves.

  • 3 zucchini, cut into wedges
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together zucchini, garlic, oil, salt, and pepper on a baking sheet coated with cooking spray; spread in a single layer.
  2. Bake 20 to 25 minutes or until browned and tender, stirring once after 12 minutes.
