Pesto Pasta with Tomatoes and Mozzarella

Ingredients

  • 1 (16-oz) pkg linguine
  • 1 (8-oz) jar pesto
  • 1 pint grape tomatoes, halved
  • 1 (8-oz) pkg fresh mozzarella cheese pearls

Instructions

  1. Cook pasta according to package directions, reserving 1 cup pasta water. Return pasta to pot, and stir in pesto and reserved pasta water. Cook, stirring often, over medium heat until thoroughly heated.
  2. Stir in tomatoes and cheese. Season with salt to taste.

Side Dish Ingredients

  • 1 (16-oz) loaf French bread, halved lengthwise
  • ¼ cup butter, softened
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning

Side Dish Instructions

  1. Preheat broiler. Place bread, cut sides up, on a baking sheet. Combine butter, garlic, and Italian seasoning in a small bowl; spread on cut sides of bread.
  2. Broil 3 to 4 inches from heat 1 to 2 minutes or until browned and crisp. Thinly slice.
