Ravioli with Ham and Veggies

Ingredients

  • 1 (25-oz) pkg frozen cheese ravioli
  • 6 Tbsp butter
  • 4 cloves garlic, minced
  • 1 (16-oz) pkg cubed ham
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (8-oz) pkg sugar snap peas
  • 1 (12-oz) pkg frozen green peas
  • 1 cup shredded Parmesan cheese

Instructions

  1. Cook ravioli according to package directions, reserving 1 cup pasta water.
  2. Meanwhile, melt butter in a large, deep nonstick skillet over medium heat; cook until butter begins to brown and smells nutty. Add garlic, ham, and mushrooms; cook 6 minutes, stirring occasionally, until mushrooms begin to brown. Stir in snap peas and green peas; cook, stirring occasionally, until vegetables are crisp-tender.
  3. Add ravioli to skillet, and toss with ham mixture, adding reserved pasta water as needed to make a thin sauce. Divide mixture among 6 plates; sprinkle with cheese.
