Chicken Kofta Hummus Bowls
Ingredients
- 1½ lb ground chicken
- ½ cup chopped onion
- 6 Tbsp chopped fresh parsley, divided
- 2 Tbsp chopped fresh mint
- 1 tsp ground cumin
- 1 tsp ground coriander
- ¼ tsp ground cinnamon
- ¼ tsp salt
- 1 (12-oz) pkg frozen riced cauliflower
- 1 (10-oz) pkg chopped romaine lettuce
- ½ English cucumber, sliced
- 1 (10-oz) container plain hummus
- ½ cup roasted bell peppers, sliced
- ½ cup pitted kalamata olives
Instructions
- Preheat grill or grill pan to medium-high heat. Combine chicken, onion, ¼ cup parsley, mint, cumin, coriander, cinnamon, and salt.
- Shape onto 12 oblong patties; thread onto 12 metal or bamboo skewers.
- Coat chicken with cooking spray. Grill 6 to 8 minutes or until done, turning occasionally.
- Cook cauliflower according to package directions.
- Divide lettuce and cauliflower among 6 bowls. Top with cucumber, hummus, bell peppers, olives, kabobs, and 2 Tbsp parsley.
